What a pro does

The lateral takes everything the house produces out to the municipal sewer, and in New York's older cities it's frequently the original pipe. Vitrified clay in short sections, sometimes with a length of cast iron close to the foundation, laid at a time when the streets it runs under looked very different. Two things attack it here. Roots come first, working into the mortared joints from the maples and elms that line so many streets in Rochester, Schenectady and the villages along the Hudson. Frost comes second, since the ground freezes deep in this state and repeated heave over decades shifts short pipe lengths out of alignment until the joints no longer line up. The plumber opens the line, then inspects it with a camera and locates any defect from the surface so the position and depth are known before a shovel comes out. That matters a lot when the run goes under a pavement or a street. From there the choice is between excavating the failed section and a trenchless repair that rebuilds the pipe from the inside, and the camera is what makes that an informed decision rather than a guess.

Not by freezing the flow, which is rare, but by moving the ground around it. Frost drives deep in New York winters and the soil lifts and settles as it freezes and thaws, and old clay laid in short lengths can only take so many cycles before joints pull apart or a section drops out of line.
Not always. Lining puts a new pipe inside the old one through the existing access, and pipe bursting pulls a replacement along the same path from small pits at each end. Both need enough of the original pipe left to follow, so a fully collapsed run generally still means excavation.
Deeper than in warmer states, because everything buried has to sit below the frost line and older New York towns often went deeper still. That depth is one reason inspection and accurate locating come first, since the cost of an excavation is driven mostly by how far down and how far out the work has to go.
It's normal for a pipe with an opening in it. Cutting roots out restores flow but leaves the gap they entered through, and they'll return through the same joint. Whether that's managed on a schedule or repaired properly depends on what the camera shows about the joint itself.
