How long should a water heater last around here?

Ten to fifteen years is the ordinary range, less where the water is hard and sediment builds in the tank. Age plus a rusty draw is a reasonable prompt to plan a replacement rather than wait. A tank on a finished floor deserves a pan and a drain.

Why do I hear knocking under the floor when a tap shuts?

That's water hammer, pressure stopping suddenly against a closed valve, and it hits under-floor runs hardest because they're often the least secured. Loose pipe in a joist bay amplifies it. Left alone it works joints loose over time.

Does an older house here still have galvanized supply lines?

Some do, and under a floor those are the runs most likely to be closing up with rust from the inside. Low flow at one fixture while the rest of the house is fine is the classic tell. Replacement is usually done in sections as the floor is opened for other work.
